Crab Dip Stuffed Jumbo Prawns
Serves 4
Pre-heated 375’F
Ingredients:
- 2 Pounds Jumbo Prawns (peeled & butterflied)
- 1 Pound Dungeness Crab Meat
- 1½ Cup Parmesan Cheese (shredded)
- 1½ Cup Marinated Artichoke Hearts (drained)
- 1 Lemon (Juice & Zest)
- 2 Tbsp Parsley
- 1½ Cup Best Foods Mayo
- 2 Cloves Garlic (chopped)
- Pinch of Salt & Pepper
Directions:
1. Zest Lemon, coarse chop and add to bowl. Squeeze lemon into bowl. Lightly squeeze crab to release water and add to mixing bowl.
2. Add 1¼ Parmesan cheese and the remaining ingredients to bowl & combine well.
3. Stuff Crab Dip along back of butterflied Prawn, sprinkle a pinch more Parmesan cheese over the top of the crab dip. Place on roasting pan and back for 8-10 minutes until prawns are done and cheese is golden brown.

(Note) If there is any Crab Dip left over, place in a small casserole dish, bake for 8-10 minutes and serve with warm bread.
