Serves 4

Ingredients

  • 4-7oz fillets of Halibut
  • Small bunch Asparagus
  • ½ Tbsp Cilantro, chopped
  • ½ Tbsp Flat Leaf Parsley, chopped
  • ½ Tbsp Mint, chopped
  • 2 stocks Green Onions, sliced green only
  • 1 Tbsp Vanilla Grape Seed Oil (plus extra for sauté pan)
  • ½ Tbsp Stone Ground Mustard
  • Salt & Pepper

The Dust

  • ¼ tsp Cumin
  • ¼ tsp Paprika (smoked optional)
  • ¼ tsp Coriander
  • ¼ tsp Turmeric
  • ¼ tsp Chili Powder

Directions:

Dry cook the spices in a sauté pan until fragrant, then grind with mortar and pestle. Allow to cool and then dust the halibut and season with salt. Heat a large sauté pan over medium high heat. Add grape seed oil to pan. Add halibut, sear and cook for 2-3 minutes on first side. Gently turn halibut over and cook through- about 3 minutes.

Serve with shaved asparagus salad.

Asparagus Salad

With vegetable peeler, shave 5 stocks asparagus and add to a bowl with chopped parsley, cilantro, mint and green onions. Add Mustard, Oil, pinch of salt & a couple grinds of the peppermill then toss and serve.
