Dirty Spiced Dusted Halibut with Asparagus Salad
Serves 4
Ingredients
- 4-7oz fillets of Halibut
- Small bunch Asparagus
- ½ Tbsp Cilantro, chopped
- ½ Tbsp Flat Leaf Parsley, chopped
- ½ Tbsp Mint, chopped
- 2 stocks Green Onions, sliced green only
- 1 Tbsp Vanilla Grape Seed Oil (plus extra for sauté pan)
- ½ Tbsp Stone Ground Mustard
- Salt & Pepper
The Dust
- ¼ tsp Cumin
- ¼ tsp Paprika (smoked optional)
- ¼ tsp Coriander
- ¼ tsp Turmeric
- ¼ tsp Chili Powder
Directions:
Dry cook the spices in a sauté pan until fragrant, then grind with mortar and pestle. Allow to cool and then dust the halibut and season with salt. Heat a large sauté pan over medium high heat. Add grape seed oil to pan. Add halibut, sear and cook for 2-3 minutes on first side. Gently turn halibut over and cook through- about 3 minutes.
Serve with shaved asparagus salad.
Asparagus Salad
With vegetable peeler, shave 5 stocks asparagus and add to a bowl with chopped parsley, cilantro, mint and green onions. Add Mustard, Oil, pinch of salt & a couple grinds of the peppermill then toss and serve.
