Herb Crusted Alder Plank Salmon with Blueberry Relish

Serves 4

Ingredients:

  • 4- 8oz Salmon Fillets (skin-off, pin-bones removed)
  • 2 Tbsp assorted chopped Herbs (Basil, Thyme, Oregano, Flat Leaf Parsley)
  • Pinch of Red Chili Flakes
  • Salt to taste
  • 2 Cups Blueberry Relish

Directions:

Preheat oven to 400 degrees.

Place alder plank in oven to pre-heat for about 10 minutes, to take the chill off.

Mix together chopped herbs, red chili flakes and salt in a shallow dish. Crust flesh side of salmon with the herb mixture, place skin side down on top of the heated alder plank and roast in the oven for 10-12 minutes or until internal temperature reaches 140’F.

Remove from oven and allow to rest for a few minutes. Transfer to a serving platter and top with Blueberry Relish.
