Honey Chili Glazed Prawns with Mango Salsa
(Serves 6)
Ingredients:
- 2 lbs Large Gulf Prawns tail on (12-14) peeled & de-veined
- 2 Tbsp. olive oil 2 garlic cloves (chopped)
- 1 tsp parsley (chopped)
- 3 Cups Mango Salsa
Chili Honey Glaze
- ½ cup honey
- Juice from ½ lime
- ½ Tbsp red chili flakes

For Chili Honey Glaze: warm in small pan over medium heat for 4-5 minutes, chill and use for dipping sauce or glazing items like prawns and chicken.
Marinate prawns in olive oil, garlic, and red chili flakes for 10-15 minutes. Barbeque prawns on a well oiled grill over hot coals. Barbeque 2-3 minutes per side, until tails start to curl in. Remove prawns from grill and toss with ½ of the Chili Honey Glaze, allow to rest for a few minutes. Place glazed prawns on a platter and top with Mango Salsa. Serve with cold dry Rosé!!
