Tomato Bruschetta
Serves 6-8 guests as an appetizer
Ingredients:
- 8 Ripe Roma Tomatoes
- 6 Cloves Garlic, roasted & crushed
- ½ Red Onion, chopped
- 1 Tbsp Olive Oil
- 2 Tbsp Extra Virgin Olive Oil
- 3 tsp Balsamic Vinegar
- 8 Fresh Basil leaves, chopped
- 1 Tbsp Parsley, chopped
- Salt and freshly ground black pepper to taste
- 1 Baguette bread
*Optional: finish with Shaved Parmesan Cheese.
Directions:
Start by roasting the garlic cloves in a sauté pan over medium high heat with 1 tsp olive oil until well caramelized. Allow the garlic to cool, chop fine.
Seed and chop the tomatoes. Add the tomatoes, garlic, onion, basil, parsley, 1 Tbsp extra virgin olive oil and balsamic vinegar to a bowl and combine. Season with salt and fresh ground black pepper.
Cut the baguette on bias about ½ thick slices. Brush with remaining extra virgin olive oil and place in a 400’F oven for 5 minutes.
Transfer the Tomato Bruschetta to a serving bowl and serve the toasted baguette on the side.
